Chorizo Cortado

Chorizo, Spanish pork sausage that is flavored with garlic and sweet Spanish paprika is a staple in the Spanish diet. During the season of the "matanza" (slaughter), many families in Spain make the treck from big cities out to the small towns where their families used to farm. They spend a few days in the pueblo helping the family make chorizo and hanging the sausage to dry in the rafters of an old family farmhouse. The rest of the year, Spaniards eat the chorizo that they made the year before or buy it in the supermarkets. They eat it plain, fry it, add it to omelettes, stews and soups.
