Please don't let the words "blood Sausage" put you off! Morcilla is a popular Spanish sausage that is made of not only blood, but onions, rice and spices. It is rich, delicious and eaten in many parts of Spain, although the recipe varies from region to region. Burgos is famous all over Spain for making the best-tasting morcilla and is pictured here. Fried in a bit of olive oil and eaten with bread or simmered in a stew or soup, it is a tasty sausage.
