It is rich, delicious and eaten in many parts of Spain, although the recipe varies from region to region. Burgos is famous all over Spain for making the best-tasting morcilla and is pictured here. Fried in a bit of olive oil and eaten with bread or simmered in a stew or soup, it is a tasty sausage.
