Crayfish are a favorite Spanish dish and catching them has been a family pastime for many years. Although they can be boiled and eaten plain, eating them in a nice tomato-white wine sauce is divine for a summer appetizer or main course. Don't forget the crusty baguette for the extra tomato sauce!
