Revuelto de Esparragos Trigueros - Scrambled Eggs with Wild Asparagus

A "revuelto" is a dish of scrambled eggs. In Spain, you will find "revueltos" on menus with a wide variety of ingredients mixed into the eggs. Wild asparagus or “esparragos trigueros” are a popular Spanish vegetable and are eaten mixed with eggs or grilled on the BBQ. We aren't lucky enough to live in an area where wild asparagus grows, and we don't normally think of eating asparagus in the fall, but to our surprise, we found beautiful fresh asparagus in the produce section. This dish makes a great breakfast or brunch dish, or a light dinner entre.
