Spanish Chicken Stew - Estofado de Pollo

This chicken stew recipe is a favorite with our family and many of our friends. Pieces of chicken are cooked in white wine, mushrooms, peppers, carrots and peas. The sauce is so delicious that even if we soak it up with some home-fried potatoes, we still use slices of baguette to wipe our plates clean. It is not a difficult recipe and is very satisfying for a cool autumn evening.
