Polvorones - Spanish Almond Cookies

The Christmas season is a culinary delight in Spain. Bakeries and pastry shops (pastelerias) are filled with delicious treats for the holidays. These include many almond-based cookies and candies, such as polvorones ("Dusty" Almond Cookies), mantecados and mazapan. Thankfully, these recipes are relatively easy to make; the ingredients are available at the grocery store and all are very tasty!
