Spanish Dinner Menu for Winter
With the holiday season behind us, most of us are looking forward to eating simpler meals that are not as rich. However, winter is in full force and we all need hot nutritious food. That doesn't mean it has to taste bad! This tasty Spanish menu starts with tuna-stuffed red peppers, and eggplant topped with a fresh tomato vinaigrette. Both dishes loaded with vitamins and minerals and neither are difficult to make. The main course of Rioja-Style Chicken is a warm chicken stew with onions, peppers and peas. Dessert is St. James cake, baked with lots of delicious and nutritious ground almonds. This is a great winter weekend menu for when you have guests because all but one dish can be prepared ahead of time.
