Conejo con Tomate - Rabbit in Tomato Sauce

Tender rabbit smothered in a thick, rich tomato sauce made with white wine, cellery and spices. Serve it with a glass of Spanish wine and hot home-fried potatoes. What could be better on a cold night?! This is one of our family's favorite recipes and one that we enjoyed just last week when our power was out. Cooking by candlelight over a gas flame, we huddled around our friends' wood-burning stove to stay warm and took in the aroma of the simmering tomato sauce anticipating the meal to come!

If you can't buy rabbit in your local grocery store, substitute chicken instead. It tastes great and takes much less time to cook. Instead of the 1 1/2 - 2 hours of simmering needed with the rabbit, chicken takes about 30-45 minutes.
