Ensalada de Endibias con Frutas - Endive Salad with Fruit

It's winter and endives are in season. The endive ("endibia" in Spanish) is a slightly bitter leaf vegetable, that can be eaten cooked or raw. The Belgians discovered a way to cultivate the endive in the early 1800's and today France is the major producer of endives. This recipe combines the slightly bitter taste of the endive with the sweetness of dates and oranges. Top with a sprinkling of pomegranate seeds and you have a salad with extra color that many winter dishes lack. Try it for a change of pace from the standard lettuce and tomato salad that can look pale in the winter.

Spain and Oranges
Most of us know that Spain grows a lot of oranges, particularly in the region of Valencia, where oranges thrive. Since this recipe calls for oranges, we thought we'd pass along something that we read in a blog post by Molly Watson, About.com's new Guide to Local Foods. We think you'll find it astounding! It seems that a certain percentage of Spanish school children have never even tasted an orange. We asked ourselves the same thing Molly did, "How is that possible?" and would add - They don't know what they are missing!
