Pimientos Rellenos de Bacalao - Recipe for Piquillo Peppers Stuffed with Cod
Bacalao or salt cod is a popular ingredient in Northern Spain. Although with the advent of refrigeration, it is no longer necessary to salt fish to preserve it, salt cod is sold everywhere and prepared often in Spanish households. Why? Because it tastes great! This dish is a tapa that does take about an hour to prepare - after soaking the cod for 24 hours. However, it is definitely worth it. The sweetness of the piquillo peppers combines with the salty cod and rich tomato sauce to create an amazing taste.
Serve the peppers with slices of crusty baguette and accompany with a bottle of chilled, dry white wine.
