Ensalada Mixta - Mixed Green Salad

In Spain, a green salad is served with "la comida" or the large midday meal, as well as the smaller late evening dinner. Many families may prepare a simple salad, containing lettuce, tomatoes and onions, with oil and vinegar dressing. However, when dining in a cafe or restaurant, (or perhaps a special meal at home), an "ensalada mixta" or a colorful, mixed green salad is generally served on a large platter in the center of the table. This salad usually includes a variety of ingredients that Americans may find surprising, such as olives, tuna and white asparagus, as well as tomatoes and onions. Easy to prepare, it is as tasty as it is attractive. Don't be afraid to add your own favorites - shredded carrots and beets, or the like. We've seen just about any vegetable added to an ensalada mixta.
