Oh no baby, it's not like the "mojo" Austin Powers has! Mojo is a Spanish word pronounced "mo - ho" and it is a kind of sauce used to accompany potatoes, fish or meat. In the Canary Islands, mojos or sauces are made with vinegar and oil and served cold. They accompany potatoes, meat and fish. These mojos can be red (from dried red peppers) or green (from cilantro) and are sometimes spicy. They have instense flavor of peppers or cilantro and are garlicky, too. It only takes 10-15 minutes to make them using a blender or food processor. Make ahead and store in the refrigerator. Try one or both with your next BBQ meat or fish, or drizzle over potatoes.
