Ensalada Mixta - Mixed Green Salad, A Summer Refresher
In Spain, a green salad is served with "la comida" or the large midday meal, as well as the smaller late evening dinner. In the summer, it is a refreshing addition to a hot lunch when the temperatures are rising on the Iberian Peninsula. Many households prepare a simple salad, containing lettuce, tomatoes and onions, dressing it with oil, vinegar and a bit of ice cold water. However, when dining in a cafe or restaurant, an "ensalada mixta" or a colorful, mixed green salad is generally what everybody wants. This salad usually includes a variety of ingredients, such as olives, tuna and white asparagus, as well as the standard tomatoes and onions. Easy to prepare, it is as tasty and really colorful.
Add your own salad favorites - shredded carrots and beets, or the like. There are no rules - just about any vegetable will go well in the ensalada mixta.
