Cuban Rice or as it is known in Spanish Arroz Cubano or Arroz a la Cubana is a popular, simple and quick main course for those weeknight dinners. It consists of a bed of white rice, covered with tomato sauce and topped in the center with a fried egg. Doesn't sound exactly like the version you've had? There are many versions of this dish - probably as many versions as there are families in Spain and Latin America! Although some families simply heat a can of prepared tomato sauce, most families in Spain make a sofrito, or tomato sauce with sauteed onions and a sweet pepper.
We recommend that you make the sofrito the beforehand since tomato sauce that is prepared at least one day ahead mellows or has a less acidic flavor. This will also reduce the cooking and preparation time for the Arroz Cubano.
