Make Rich and Tasty Sofrito Now with Summer Tomatoes
Cook Sofrito Now and Freeze for Later
Summer is ending and the tomato harvest is winding down. There are still lots of fresh, red, ripe tomatoes available in the markets right now. They are perfect to make sofrito, Spanish tomato sauce. In fact, now is a good time to cook up a few batches of sofrito and freeze them in containers or even plastic freezer bags to be used in recipes later.
In the photo on the left, we are cooking up a large batch of sofrito outside on the patio. We like to use a small gas burner outside, so we can enjoy the outdoors and any sauce that splatters or spills can be washed off easily and quickly. Then, the sauce is cooled quickly and we divide it into freezer bags, laying them flat to freeze.
