Spanish Chicken Stew - Estofado de Pollo
Stews are very popular in Spain, particularly in the colder regions, including central and northern Spain. This chicken stew dish is from Castilla, where colder weather starts in October and lasts for months. In fact, snow can still be falling as late as April. The Spanish eat hearty soups and stews to stay warm through the chill. This particular chicken stew is one of our family's favorites, combining garlic, onions, white wine and mushrooms, as well as vegetables. Serve with home fried potatoes and lots of bread for the sauce!
