Noodle Paella - Fideua (c) 2008

Autumn is the time of year we love because although the mornings are cool and crisp, many afternoons are sunny and warm - at least warm enough to keep cooking over our BBQ! So, we take advantage of these afternoons to invite our friends over for paella, made with rice or fideua, made with noodles. Both of these dishes are typical of the Valencia region in Spain and equally delicious.

Seafood Paella - Paella de Marisco (c) 2008

Paella is the most famous Spanish dish, but fideua is perfect for those of us who prefer noodles. Neither dish is complicated, but both require preparation of vegetables and seafood beforehand. We have written recipes for both dishes in text version and step-by-step version with photos.
