Easy Extremena Style Chicken-Pollo a la Extremena

This Spanish chicken dish is typical of Extremadura, a region in southwestern Spain, bordering with Portugal that is known for simple, uncomplicated dishes. It is an easy recipe which takes about 45 minutes to prepare, making it a great main course for a weeknight.

The preparation is simple: After cutting the chicken into pieces and browning, simmer with Serrano ham, garlic, onions, brandy and fresh pureed tomatoes, creating a flavorful sauce. Serve with home-fried potatoes to soak up every morsel.
