Labor Day Leftovers? Add a Spanish Sauce to Them!

Romesco Sauce

Labor Day weekend is over, but our guess is that lots of families have leftovers just like we do. Last night's BBQ, even wrapped tightly in plastic have dried out a bit. So, we'll make Romesco sauce (pictured here) or a mojo to spoon over the ribs after we re-heat them. In fact, any of the robust, garlicky Spanish sauces can help revive leftover grilled meats. Best of all, none of the sauces are difficult to make.

In less than 30 minutes, we will have the Romesco sauce prepared from a jar of roasted red peppers, garlic, almonds, tomatoes, oil and vinegar. A tossed green salad and home fried potatoes will complete the meal.

Served with any kind of meat, poultry or vegetable, Spanish sauces can liven up leftovers, including alioli, mojo picon and mojo verde, among others.
