Thinly sliced smoked salmon slices are laid atop pieces of baguette, then slices of hard-boiled egg, a dollop of mayonnaise and a little tomato are added to complete the pincho.

i love stuff like this!!! 3 or 4 of these little gems w/ a nice mixed salad & a glass of good wine would make a lovely, light dinner. i am always charmed by your wonderful food offerings. some of them, though spanish in origin, are very similar to many of the dishes my mother used cook…she was from napoli, italia. thanks to you both for the great recipes…one of my favorites is the potato tortilla w/eggs.
