This Spanish chicken dish is typical of Extremadura, a region in southwestern Spain, bordering with Portugal. Extremadura is known for simple, uncomplicated dishes, and this is defniitely one of the classics. It is a simple dish, which takes about 45 minutes to prepare, making it a great main course for a weeknight.
Preparing Pollo a la Extremena is simple: After cutting the chicken into pieces and browning, simmer with bits of Serrano ham, garlic, onions, brandy and fresh pureed tomatoes, creating a flavorful sauce. Serve with home-fried potatoes to soak up every morsel.
