This weekend I went to see a dear friend for her birthday. After catching up a bit, I was quite surprised when she announced that what she'd really like to do for her birthday is to learn how to prepare the tortilla espanola we always make for appetizers, as well as gambas al ajillo. I was so happy she asked! They are two of the most popular recipes on our site - and among our friends, so it shouldn't have been a surprise that she wanted to learn to make them herself. After a quick trip to the neighborhood grocery store, we spent the next hour or so preparing those dishes, and it was a lot of fun!

Since we prepare tortillas at least once a week, we sometimes forget that people are a little timid about making them. To obtain consistent results, it helps to practice preparing them until you are comfortable with how quickly the tortilla will cook, how much egg-potato mixture the frying pan will hold, etc. The biggest reason that people hesitate to make tortillas seems to be that they are apprehensive to flip them over.
