Spanish Perrunillas Cookie Recipe

Perrunillas are a traditional cookie from Extremadura. Originally made with lard to give them rich and melt-in-your-mouth, this modern recipe uses vegetable shortening instead, as well as sugar, eggs, flour, lemon peel, cinnamon and a touch of aguardiente liqueur. Don't worry if you do not have aguardiente, use anise liqueur, or even rum! We enjoy these cookies so much that when we bake them, we must give most away, or we'll end up eating the entire batch before the day's out!

I have the orginial receipe for the Perrunilla, It was given to me by a neighbor. She also had given me another cookie she made for me that is made with Dates, she called them ” Lady Fingers” I was surprised when she wrote out the ingreidents, she left out the amount of flour to be added, later she told me it all depended on the wettness of the lard.
Why don’t people use the lard any more, I know that the fat content is part of why, Is there a receipe for “Lady Fingers”
I made the Perrunilla for Christmas and they were such a hit at work …. are my co-workers in for high fat! like to know if the name Lady Fingers is the correct name for this cookie?
