We recently heard from friends that they were hesitant to make paella because they didn't know what kind of rice to use, or because they thought it needed to be prepared outside - or only for large groups. For whatever reason, many people are a bit intimidated by the thought of preparing this traditional Valencian rice dish. So, we got busy, and wrote three articles to help demystify paella. No need to prepare it only for large groups, so we wrote a recipe just for two. Don't wait for warm weather to prepare it outside when you can prepare it on the stove, or in an electric skillet, like the one at the left. The short and medium grain rices used in Spanish rice dishes are available in the USA and around the world. So, no more excuses - you can prepare a paella tonight!
