An Easter Brunch Menu Full of Traditional Spanish Dishes

The menu we assembled for our Spanish Easter Brunch has a variety of both breakfast and lunch dishes - Spanish omelet (tortilla) and fresh squeezed orange juice, creamy soup with prawns, fresh vegetables, spring lamb or rabbit with rice, and fresh mixed green salad. Finish off your Spanish Easter meal with an almond custard filled tort or Basque cake (pastel vasco). Enjoy all this delicious food with a glass of sparkling Spanish "cava." Don't worry about preparing ALL of the dishes listed. Pick two or three to add to your Easter menu, or divide up the work between your family.
