"Soupy" or "wet" rice dishes are very popular in Spain. The medium and short grain types of rice, like bomba are perfect for main courses with small pieces of fish and shrimp. This Spanish seafood rice dish combines onion, garlic, tomatoes, paprika and saffron, which add lots of flavor and a beautiful yellow color to the rice. It is a simple dish, great for a weeknight because it is ready in about 30 minutes.
