Spanish Side Dish for Spring - Esparragos Gratinados

Esparragos Gratinados - Asparagus with Serrano Ham and Béchamel Sauce

Fresh green asparagus is appearing in our local supermarkets. In California and much of the Northern hemisphere, the peak season for asparagus is in April and May, and this is a side dish made for Spring... Steam asparagus, then wrap in thin slices of Serrano ham and pour bechamel sauce on on top. Finish by sprinkling with a touch of parmesan cheese and bake for a few minutes until golden brown.
