Seafood salad is a popular side dish in Spain, and a perfect salad for summer. Shrimp, mussels and fish, as well as sweet peppers, onions and tomato are tossed with oil and vinegar dressing. Each cook prepares their own version, which can include pickles, corn or olives. This version comes from our friend, Chef Jose who adds a "secret" ingredient - chopped mint leaves.
