Serrano Ham-Zucchini Montado Recipe - Calabacin a la Favorita

Tomorrow we'll grill some lamb chops, fry potatoes and prepare a new tapa for our July 4th BBQ in Spain. One of the tapa bars we visit regularly in Burgos is La Favorita that serves this unique Montado. Montados are a type of tapa made by piling one or more ingredients on top of a slice of baguette. There are so many creative possibilities when making montados. This one is simple and very quick to prepare. Cut zucchini and dip in beaten egg and flour, and fry. Between slices of fried zucchini, place Serrano ham and elver eels. All these ingredients "ride" on top of a slice of baguette.
