Asturian Beef Stew- Carne Gobernada

Asturian-Style Beef in White Wine or Carne Gobernada is a dish from Oviedo, the capital of Asturias. Chunks of beef and onions are slowly simmered in white wine until very tender. It is a traditional main course, which would have been tended for several hours over the fire. We all seem to have less time to cook, so we have a pressure cooker version of this classic, which cuts cooking time to approximately 30 minutes. The tender beef chunks and soft onions sit in a very superb wine sauce. Serve with home-fried potatoes to soak up the sauce.
