Murcia doesn't get as much attention as other areas of Spain, especially being sandwiched between Valencia and Andalucia. However, the traditional cuisine in Murcia, like the rest of the Mediterranean is fresh and delicious. This summer we tasted this warm salad while on vacation and said, "What a fabulous way to eat your vegetables!" Cook asparagus, artichokes, leeks and potatoes, or use any vegetables that are in season. After cooking them, prepare and dress the vegetables with a simple tomato vinaigrette and a sprinkling of chopped, hard-boiled egg. Serve warm.
