Many traditional Spanish dishes from the Mediterranean coast of Spain include fruit. This Spanish roast chicken recipe is full of citrus flavor and aroma. It is easy to make and its fresh lemon flavor goes well with any green vegetable and rice or potatoes.

Prep Time: 10 minutes

Cook Time: 1 hour, 30 minutes

Total Time: 1 hour, 40 minutes

Yield: 4-5 Servings


  • 1 whole chicken
  • 3 lemons
  • 1 tsp oil
  • salt to taste


Heat oven to 375F (190C).

Remove innards and extra fat from chicken. Cut lemon in half and place both halves in the chicken cavity. Rub oil all over outside of chicken, then rub with salt.

Place chicken in roasting pan and place in middle shelf of hot oven. Roast for 45 minutes.

Slice remaining two lemons into thick slices. Remove chicken from oven and place several slices of lemon on outside of chicken and in bottom of roasting pan. Return chicken to oven for another 45 minutes, or until done.

Remove from oven and allow to sit for 5 minutes before carving. Remove lemon halves from cavity and set aside. Carve chicken into portions. Squeeze juice from lemon halves over the portions and garnish with lemon slices.
