Ingredients:
- 1 chicken
- 1 large yellow onion
- 4 cloves garlic
- 4 oz (125 ml) brandy
- 5-7 Tbsp olive oil
- 4 thin slices Serrano ham*
- 1 lb (450 gr) tomatoes
- salt to taste
- flat leaf parsley for garnish (optional)
Preparation:
This Extremena-Style Chicken recipe makes 6 servings.
* Substitute any type of ham if Serrano is not available.
Remove gizzards, clean and dry the chicken. Cut into 8 pieces. Salt all pieces on both sides. Cut ham slices into small pieces. Peel and finely chop garlic.
Pour a few tablespoons of oil into a large heavy bottom frying pan or large open clay dish. Heat on stove. When hot, add chicken and ham and brown chicken on both sides. Reduce heat to medium-low. Add half of chopped garlic. Cover and cook for about 10 minutes.
While chicken is cooking, Peel and finely chop onions. Cut tomatoes into small pieces and process in food processor or blender until crushed. Add onions, tomatoes and brandy to chicken, stirring to mix. Cook uncovered on medium-low until onions become transparent.
Add the rest of the chopped garlic. Stir and cover. Simmer for 15-20 minutes.
