Frixuelos de Asturias Recipe - Asturian Crepes

This basic recipe for frixuelos can be prepared on the sweet side, by filling them with whipped cream or egg custard. If you want to prepare the traditional Asturian frixuelos, fill with apple compote, and serve as dessert. Scrambled eggs, melted cheese or small chunks of meat can make salty frixuelos.

Rather than stuffing the frixuelos with a filling, some modern cooks stack them up like pancakes, spreading whipped cream or chocolate sauce between the frixuelos.

Any way you decide to serve them, they are easy to prepare, and you're practically guaranteed not to have leftovers.

Ingredients

  • 1 1/2 cups sifted all-purpose flour

  • 3 tablespoons sugar

  • 1/2 teaspoon salt

  • 3 large eggs

  • 16 ounces milk

  • 2 tablespoons unsalted butter

Steps to Make It

  1. Place butter in a small bowl and heat in microwave until melted. To melt on stovetop, put butter in a small saucepan and heat over low heat, being careful not to burn the butter.

  2. Sift together flour, sugar and salt into a large mixing bowl and set aside.

  3. In a medium mixing bowl, beat the eggs until thick. Use a stick blender or hand mixer to make the job easier. Beat in milk and melted butter until well blended.

  4. Add milk-egg mixture to dry ingredients and beat until batter is smooth.

  5. Heat a non-stick frying pan over medium heat. Melt a very small amount of butter in the pan. Using a ladle, pour batter into pan and cook over medium heat until lightly browned on bottom. Turn over and lightly brown other side.

  6. When cooked, transfer to a warm plate. Spoon filling, such as applesauce in center, and roll up. Garnish with orange slices.

Serving Suggestions

  • Fill with your choice of fruit preserves, cream, or egg custard.

  • An alternative to filling, is to drizzle with your favorite flavored honey, such as rosemary, orange or wildflower honey.

  • To create citrus-flavored frixuelos, add grated peel of a lemon or an orange, and a bit more sugar.
