Ingredients:
- 4 large apples, such as Rome Beauty, Golden Delicious, Gravenstein or Jonagold
- 4 tablespoons granulated sugar
- 4 oz. Licor 43
- 2 Tbsp butter or margaine (optional)
- 1 cup boiling water
- 4 tsp chopped almonds (optional)
Preparation:
This baked apple recipe makes 4 servings.
Pre-heat oven to 350F degrees. Boil water in a small sauce pan on stove.
While waiting for water to boil, prepare the apples. Rinse the apples and dry with a paper towel. Core the apples, leaving about a 1/2-inch on the bottom of the apples. Do not remove the skin.
Place the apples in a 8" x 8" glass baking pan and carefully pour 1 tbsp sugar into the hole left by removing the core of each apple. Then, slowly pour the liqueur into the hole and optionally top with 1/2 Tbsp butter. Pour the boiling water into the pan to cover bottom.
If desired, add a tsp of chopped almonds to each apple core before baking.
When oven temperature is reached, place the pan in center rack and bake for 40-60 minutes, or until apples are soft. Check apples after 20 minutes and baste with pan juices. When apples are done, use tongs to remove from pan of water.
Note on Baking Time: Baking time can vary, depending on the particular type of apple used. High moisture content of some types of apples can extend baking time.
