Ingredients:
- 1 yellow onion
- 2 tomatoes
- 1 medium zucchini
- 1 clove garlic
- 1-5 lb (2 kg) whole fish, such as seabream
- salt and pepper to taste
- 8 oz (125 ml) water
- 8 oz (125 ml) white wine
- 1 sprig Italian parsley
- 2 tablespoons pine nuts
- few tablespoons olive oil
Preparation:
Heat oven to 400 F (200C) degrees.
Peel and cut the onion into thin rings. Rinse and slice tomatoes and zucchini in rounds. Peel and thinly slice the garlic clove.
Clean the fish. Salt both inside and out. Sprinkle with parsley.
Line a large open broiler pan with aluminum foil. Place fish in pan and drizzle olive oil over top.
Arrange slices of onion, zucchini and tomatoes in pan around fish. Place garlic slices and pine nuts on fish.
Pour in water and white wine into pan. Bake in pre-heated oven on middle shelf for approximately 20 minutes.
