Definition: Omelet. In Spain, one of the most common dishes served daily is the tortilla espanola or tortilla de patata, made with fried potatoes, onions and eggs. However, there are many types of omelets in Spain, including mushroom, tuna and asparagus.

Omelets are eaten as tapas, as the main course for late Spanish dinners or as fillings in sandwiches.
