Ingredients:
- 4 large eggs
- virgin olive oil for frying
- 1 Tbsp red wine vinegar
- 1 tsp Spanish paprika
- salt to taste
Preparation:
Pour a 1/4-inch to a 1/3-inch of virgin olive oil into a heavy bottom frying pan, about 8 inches wide. Heat on medium high. When oil is hot, add one egg and fry. When cooked, transfer to a plate. Repeat with the other three eggs.
Sprinkle red wine vinegar over the top of eggs. Then, sprinkle no more than 1 tsp of paprika over all four eggs. Then, pour 1-2 Tbsp of hot olive oil from pan over eggs, which should make the paprika and vinegar sizzle.
Serve immediately with rustic bread.
