Huevos Fritos con Vinagre y Pimenton, Fried Eggs with Vinegar and Spanish Paprika

This typical Spanish fried egg dish is a great way to prepare a quick dinner, or a late weekend breakfast. Eggs are fried in virgin olive oil. After transferring them to a plate, sprinkle with red wine vinegar and Spanish paprika to spice up fried eggs. Be sure to serve with fresh rustic bread for dipping.

Yield: 4 Servings

Ingredients:

  • 4 large eggs
  • virgin olive oil for frying
  • 1 Tbsp red wine vinegar
  • 1 tsp Spanish paprika
  • salt to taste

Preparation:

Pour a 1/4-inch to a 1/3-inch of virgin olive oil into a heavy bottom frying pan, about 8 inches wide. Heat on medium high. When oil is hot, add one egg and fry. When cooked, transfer to a plate. Repeat with the other three eggs.

Sprinkle red wine vinegar over the top of eggs. Then, sprinkle no more than 1 tsp of paprika over all four eggs. Then, pour 1-2 Tbsp of hot olive oil from pan over eggs, which should make the paprika and vinegar sizzle.

Serve immediately with rustic bread.
