Carne Gobernada - Asturian-Style Beef in White Wine Sauce

Carne Gobernada is a typical dish from Oviedo, capital of Asturias. It is a traditional main course, prepared by very slowly cooking the chunks of beef in onions and white wine until they are tender. Depending on the cut of beef, this might take as little as 40 minutes or as long as an hour, but the resulting dish is definitely worth the wait. The tender beef chunk and soft onions sit in a very superb wine sauce. Serve with fried potatoes to soak up the sauce and you have a lovely main course any time of year.

INGREDIENTS:

  • 3.5 lbs. beef, such as chuck roast
  • 3 large yellow or white onions
  • 3 cloves garlic
  • 8-10 oz. white wine
  • 2-3 Tbs olive oil
  • salt to taste

PREPARATION:

Serves 5-6.

Trim fat and gristle from beef and cut into small cubes, about 1/2-inch in size.

Peel and finely chop onions. Peel and mince garlic.

Place meat in a bowl and mix in salt and minced garlic. Allow meat to sit in garlic for 5-10 minutes before cooking.

In a large frying pan or casserole pan, heat 1-2 tablespoons of olive oil Add meat and sauté cubes on medium heat until brown on all sides. Add onion and stir. Add 8 oz of white wine and simmer slowly.

Simmer meat and onions on low heat, making sure not to burn the onions. If more liquid is needed add rest of wine and/or 4 oz of water. Cook until meat cubes are tender, checking the pan often so meat and onions do not burn. It may take an hour for meat to become tender.

Serve with fried potatoes.
