Chicken and Peppers in Garlic Wine Sauce - Pollo con Pimientos, Ajos y Vino Blanco

Chicken is first sauteed in olive oil and garlic, then simmered with roasted red peppers in white wine, making a delicious sauce. It is a easily prepared in 30 minutes, making it a good weeknight dish.

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

  • 2 lbs boneless skinless chicken breasts
  • 5-6 Tbsp extra virgin olive oil
  • 4-5 garlic cloves
  • salt to taste
  • 2 roasted red peppers
  • 12-20 oz dry white wine

Preparation:

Salt chicken breasts on both sides. Pour olive oil into a large heavy-bottomed frying pan and place on medium heat. When hot, place chicken breasts in pan and brown on both sides.

While chicken is browning, peel and slice garlic. After chicken is browned, sauté garlic in pan with chicken on low heat. Cut red peppers in half and place in frying pan.

Pour 12 oz white wine into pan and cook on medium heat until chicken is cooked throughout. If white wine evaporates, add 4 oz. more and continue to cook.

When chicken is cooked, slice the chicken and place on platter with the garlic slices and red pepper. Pour wine sauce over top and serve.
