Remove the fish from the water. Pat it dry with paper towels and set aside. Pour about a 1/4 cup of Spanish virgin olive oil into a large, open frying pan and turn burner on medium heat.
While oil is heating, put flour onto a plastic bag and place 2 pieces of fish in at a time. Shake bag and cover the pieces in flour. If you do not have a plastic bag, use a large plate and cover cod in flour on all sides. Remove floured fish and set on plate until oil is hot
