Between traffic jams, shuttling the kids to and from sports and driving to piano lessons, weeknight schedules don't allow much time for cooking. Yet most of us prefer home-cooked meals to fast food dining. So, we put together our list of quick and easy main courses that use ingredients that nearly everyone has in the pantry or all supermarkets carry. Add a green salad and a baguette to any of these main dishes and complete your meal.
Arroz Cubano - Cuban Rice
Cuban Rice is a popular dish for families in Spain and as with any dish that is popular, every household has their own version. Some cooks prepare the rice with garlic or a bit of tomatoes and onion as in the photo, while others prepare simply white rice. Others may open a can of tomato sauce and sauté it with a bit of olive oil, while other use a "sofrito" with onions and peppers. So, this is the Sierra household's version of "Arroz Cubano" that you can prepare in less than 30 minutes.
Salmon in Green Sauce - Salmon en Salsa Verde
Green sauce, or "salsa verde" is a typical Spanish sauce and is usually served with fish. In this case, the sauce also includes green peppers, which gives it a beautiful green color. The sauce is prepared first. The salmon is sautéed in olive oil flavored with garlic and served atop the sauce. It is a healthy and quick dish, perfect for a light dinner.
Albondigas con Salsa de Perejil - Meatballs with Parsley Sauce
This main course originates in the Balearic Islands of the Mediterranean. The bacon in these meatballs make them extra flavorful. Combine them with a rich-tasting sauce of broth, parsley and walnuts and you have a delicious main course.
Langostinos Valencianos - Valencian Prawns
This recipe originates in the region of Valencia, which is located on the eastern coast of Spain. It is simple, colorful and flavorful. Prawns and mussels are simply sauteed with onion and garlic, then cooked in a white wine-tomato sauce. It is a good summer main course and can be served with rice.
Revuelto de Esparragos Trigueros - Scrambled Eggs with Wild Asparagus
"Revueltos" are scrambled eggs, usually mixed with another ingredient and are a popular dish in Spain. This dish mixes asparagus, garlic and paprika with scrambled eggs. You might not think of scrambled eggs as a dinner dish, but it is similar to an omelete and very filling. And, don’t worry – “wild” asparagus is not required.
Tomates Rellenos de Atun - Tuna-Stuffed Tomatoes
Fresh and light, this dish makes a great main course for lunch or light summer dinner. It could also replace a salad at dinner. Fresh tomatoes, stuffed with tuna and cucumbers, then dressed with oil and vinegar. They are juicy and full of flavor. Serve with toast on the side.
Pork Chops with Peppers & Brandy-Chuletas de Cerdo con Ajo, Pimientos y Brandy
Pork is a Spanish favorite and this main course has the flavor of Spain. Pork chops are sauteed with roasted red peppers, garlic and brandy, which form rich, flavorful pan juices that are drizzled over the chops. Although pasta did not originate in Spain, spaghetti and various kinds of pasta are enjoyed all over Spain. This dish combines typical Spanish ingredients – tomatoes, onions, lots of garlic and smoked Spanish paprika. It is tasty and quick to prepare!
Pasta in Chorizo and Tomato Sauce - Macaroni en Salsa de Tomate con Chorizo
Macaroni, rigatoni, penne and spaghetti are often eaten in Spanish homes with a typically Spanish twist to the sauce – Spanish chorizo sausage and Spanish smoked paprika. As in Italy, in Spain pasta is considered a first course rather than a main course, however this recipe will serve 4 adults as a main course.
