"Ensalada Campestre" is a typical salad in Spain, served as a first course. It is a nutritious and flavorful salad that combines sweet peppers, onions, potatoes, sardines or tuna and olives. This is quick and easy recipe, which is economical, too. It's the perfect salad for summer dinners or as a main course at lunch.

Ingredients:
- 3 medium potatoes
- 1 sweet red pepper
- 1 sweet green pepper
- 1/2 medium white onion
- 2 hard-boiled eggs
- 4 canned sardines, drained (or 1-6 oz can white tuna, drained)
- 20 green olives (stone in)
- 4 oz boiled ham, cut into cubes (optional)
- white vinegar
- extra virgin olive oil
- salt to taste
Preparation:
Boil the potatoes (skin on) in a medium saucepan until cooked. Cool in a pan of cold water for 5 minutes, then allow to cool on plate until room temperature.
Rinse peppers and remove stem and seeds. Cut into 1-inch squares. Peel and coarsely chop the onion.
Peel potatoes and cut into 1-inch cubes. Peel and cut hard-boiled eggs into quarters.
Place potatoes, peppers, onion and chopped eggs into a large salad bowl. Add sardines, olives and ham.
Dress with vinegar, olive oil and salt to taste.
