Spanish White Bean and Feta Salad Recipe

Beans are a staple in Spain and served as the primary ingredient in this quick and easy Spanish salad, full of typical Mediterranean ingredients. Cucumber, red pepper, onion, garlic, olives and goat cheese combine with the beans and oil and vinegar dressing to create a zesty salad treat for summer meals.

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 4 Servings

Ingredients:

  • 1 large cucumber
  • 1/2 sweet red pepper
  • 1 garlic clove
  • 1/4 medium yellow onion
  • 1/2 cup kalamata olives
  • 1/4 cup feta cheese
  • 2 16 oz cans white beans
  • 4 oz (118 ml) extra virgin olive oil
  • 2 oz (60 ml) red wine vinegar
  • salt and pepper to taste

Preparation:

Peel cucumber. Slice lengthwise, then into half-rounds. Rinse pepper and remove membrane and seeds. Cut into small squares.

Peel garlic and mince. Finely chop onion.

Place cucumber, pepper, garlic, onion, olives and cheese in a medium bowl. Drain the beans and add to bowl. Mix well.

Add oil, vinegar, salt and pepper. Adjust to taste. Allow to sit for at least 30 minutes so flavors can soak into ingredients.
