Modern Spanish cuisine integrates many ingredients from regional Spanish recipes, as well as other countries into dishes. This Balsamic Vinegar Sauce is a good example of contemporary Spanish food. The sauce can be used to decorate, as well as to add a sweet and tangy taste to salads, tapas and desserts.

Ingredients:
- 6 oz (150 ml) Balsamic vinegar
- 4 oz (100 ml) white vinegar
- 1/2 cup (70 gr) brown sugar, packed
Preparation:
Put all ingredients into a medium saucepan and stir until sugar is completely dissolved. Bring to a boil, then immediately reduce to a simmer, stirring often.
Simmer for approximately 20 minutes, until liquid is reduced and thickens. Stir often.
Remove from heat and allow to cool for 10 minutes, or until cool enough to touch. Pour into a squeeze bottle and refrigerate.
Use sauce as a garnish on salad, cheese or tapas.
