Ingredients:
- 1 lemon
- 5 garlic cloves
- 4 oz (125 ml) olive oil
Preparation:
Peel 1/4 of the lemon. Place peel in a small saucepan and cover with water. Bring water to a boil and boil for 2-3 minutes to soften peel. Remove from heat and drain. When cool enough to touch, cut into about 10 pieces.
Peel and coarsely chop the garlic cloves. Squeeze juice from half of the lemon.
Place garlic into a food processor, blender or a stick blender. Add the lemon peel, lemon juice and olive oil. Blend until smooth.
Use as a dipping sauce for shellfish, or vegetables, or brush on bread. Adjust the amount of garlic and lemon to your taste. If you prefer a stronger garlic flavor, add another clove. If the garlic is overpowering, add more oil.
Note: If you do not have time to soften the lemon peel by boiling, grate 1 teaspoon of zest along with the juice.
