Ingredients:
- 2 ripe avocados
- juice from 1/2 lemon
- 2-3 oz fresh cheese, such as goat
- 1 clove garlic
- 1 Tbsp catsup
- 1/2 tsp Tabasco sauce
- 3-4 Tbsp dry sherry
- 8-10 peeled shrimp (31-40/lb size)
- salt to taste
Preparation:
Remove pit and scoop out avocados into a small mixing bowl. Squeeze the juice from a half of a lemon onto the avocado and mash immediately before avocado begins to turn brown. Mix in the goat cheese.
Peel and mince the garlic and add to the avocado mixture, along with the catsup, Tabasco and sherry. Mix all ingredients thoroughly.
In a small saucepan, heat 2 cups of water to a boil and drop in the shrimp. Cook 3-4 minutes, or until cooked. Drain the water and allow shrimp to cool.
Once shrimp is cooled, cut each shrimp into 3 pieces. Spread avocado mixture onto crackers or bread and place pieces of shrimp on top. If you prefer, mix the shrimp pieces into the avocado mixture and serve in a bowl.
Because avocados turn brown with exposure to the air, when storing the spread, cover the top surface with plastic wrap.
Variation: If you do not wish to eat the spread with shrimp, serve the avocado-cheese spread by itself on crackers or bread.
