Chop the Vegetables

Clean and slice the cabbage thinly. Chop the onions. Peel, core and finely chop apples. Chop the bacon into small pieces. Peel the potatoes and cut each one into 8 pieces.

Sauté the Vegetables

Pour a few tablespoons of olive oil into a large pot. Heat the pot on stove. Sauté the onions. Then, add the cabbage, apples and bacon and stir. Cook over medium heat for about 5 minutes. Add the vinegar, bay leaf, salt and pepper. Continue to cook for another 5 minutes, stirring often.

Bake & Serve

Preheat oven to 350 degrees. Pour in 1 cup of water and stir. Cover the pot very tightly and place covered pot in the oven and bake for 2 hours. After 1 hour, remove from oven, add the potatoes, stir and cover again. Return to the oven immediately. Continue to bake for 1 more hour.

Serve with sausage or roast pork or beef and rustic-style bread.
