Pork Chops a la Madriline with Paprika Potatoes - Chuletas de Cerdo a la Madrilena con Patatas con Pimenton

Roasted potatoes combined with paprika are the perfect complement to a Spanish meal. Using a microwave to speed up roasting time, you can cook up these potatoes in less than a half hour. Now that's quick and easy!

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients:

  • 4 potatoes
  • 1 Tbsp paprika
  • 2-4 Tbsp virgin olive oil
  • salt to taste

Preparation:

This roasted paprika potatoes recipe makes 4 servings.

Peel potatoes. Cut potatoes lengthwise into 6-7 pieces each. Place in a shallow glass baking dish and sprinkle with paprika. Drizzle olive oil over the top and mix to coat potatoes evenly. Salt to taste.

Place in microwave and cover loosely with either a plastic microwave cover or plastic wrap. Microwave on high for 10 minutes. Remove dish and stir. Return to microwave and cook until potatoes are soft.

Alternate cooking method: If you are making a roast of chicken or meat, after microwaving the potatoes for 10 minutes, place the potatoes in the oven with the chicken or meat in the roasting pan for the last 10 minutes to roast.
