The intense red-orange color and smooth texture of this sauce is very attractive and the flavor is even better! It is very simple to make and can be spread on a sandwich, used as a dipping sauce or drizzled on fish, meat or vegetables.

Ingredients:

  • 3 large cloves garlic
  • 2/3 cup mayonnaise
  • 1 whole roast red pepper, stem and seeds removed
  • 1 tsp Spanish paprika
  • dash salt
  • 2-3 Tbsp extra virgin olive oil
  • 1 tsp Spanish sherry vinegar

Preparation:

This pepper-garlic mayonnaise recipe makes approximately 1 cup. You will need either a food processor or stick blender to make this mayonnaise.

Peel the garlic and slice each clove in half. Place garlic and mayonnaise into a food processor or bowl. Process or blend, pulsing on and off until the garlic is blended into the garlic. Add the pepper and paprika and blend until smooth. Taste and salt. Drizzle in the olive oil and vinegar while blender or processor is running.

For a variation on this recipe that has a mellower garlic flavor, instead of using raw garlic, sauté the garlic halves before blending.
